Tasty Tofu Tostadas

Ingredients (use vegan versions):

    olive oil
    1 package extra firm tofu
    1 small red onion, sliced
    1 large avocado
    1 Roma tomati
    juice of 1 lime
    small handful cilantro
    4 tortillas
    mixed greens
    hot sauce
    vegan feta cheese
   

Directions:

1. In a skillet, heat up the olive oil on high. Cut block of tofu into 1/4- 1/2-inch slices  (12 for one block). Marinate tofu in hot sauce. Cut 4 1/2-inch slices of red onion. Place all of this goodness in hot skillet – let cook until brown on each side ~ 15 min total

Infamous White Sauce

Ingredients (use vegan versions):

    1/2 package frozen spinach OR 2 cups frozen broccoli
    vegetable oil
    1 tablespoon minced garlic
    2 tablespoons flour
    3 tablespoons vegan butter
    2 cups pasta-anything except for angel hair, spaghetti, etc
    garlic salt (I use McCormick Sea Salt and Garlic Grinder)

    3-4 tablespoons dried Italian seasoning

"Magic Shell" Mango

Ingredients (use vegan versions):

    1 ripe mango, chilled
    2 tablespoons coconut oil
    1 1/2 teaspoon cocoa powder

Directions:

1) If coconut oil is solid, heat just until it becomes liquid (not hot).

2) Whisk oil and cocoa powder together and drizzle over chilled sliced mango. The chocolate/coconut mixture hardens like "magic shell" ice cream topping!

Carrot & Courgette Ribbon Salad

Ingredients (use vegan versions):

    1 courgette, washed
    1 carrot, washed
    Salad dressing

Directions:

1) With a vegetable/potato peeler, peel carrot and courgette lenthways into strips/ribbons.  Remember to turn the courgette after a couple of peels get a bit of green edge on some of the ribbons – makes it pretty!  Mix the ribbons together.

2) Drizzle your favorite dressing over the ribbons – I love a basic oil dressing with lemon or lime juice, bit of cider vinegar and S&P.

    3 tablespoons vegan margarine

Herby Butter Bean and Potato Mash

Ingredients (use vegan versions):

    6 to 8 small to medium new potato
    1 – 15 ounce can butter beans, rinsed
    2 cloves garlic, roughly chopped
    Salt and pepper
    herbs (dried or fresh) – parsley and chives are good
    Vegan margarine, to taste

Directions:

1) In a large pot, combine potatoes, garlic and butter beans and cover with water. Bring to a boil and cook for 15 mins or so, or until potatoes are tender. Drain and return to pot.

1. Cook rice according to package instructions. Meanwhile, dice onion and garlic.

    1 orange pepper
    1/2 cup fresh peas

    1-1/2 cups flour
    1 cup chunky peanut butter (Teddie's Super Chunky is best)
    3/4 cups sugar
    1/4 cup melted vegan margarine
    1 teaspoon vanilla
    1/2 teaspoon baking powder
    1 to 2 tablespoon of vegetable oil

Directions:

1. In a bowl, thorougly combine all ingredients except for the oil (flour, peanut butter, sugar, vegan margarine, vanilla, and baking powder). 

2. Add the oil as needed to get a dough-like consistency.

3. Roll the dough to create 2" balls and place on un-greased cookie sheet.

Ingredients (use vegan versions):

    8 ti leaves (washed)  OR  aluminum foil (not as good)
    16 luau leaves
    1 yellow sweet potato, cut into 1"-wide rounds
    1 okinawan sweet potato, cut into 1"-wide rounds
    2 to 4 pinches of Hawaiian salt, to taste

    8 pieces of string to tie laulau together (optional)   
    Steamer, Bamboo Steamer, Dutch oven, or Imu (hawaiian outdoor oven)
    Enough water to fill the bottom of your steamer with 1" of water.

Ingredients (use vegan versions):

    4 teaspoons oil (coconut, sunflower, or non-virgin olive)
    1/2 cup popcorn kernels
    2 tablespoons vegan margarine
    2 tablespoons agave nectar
    2 tablespoons organic sugar
    1 teaspoon ground cinnamon
    1 teaspoon vanilla extract
    1/4 teaspoon sea salt

Fiesta Corn Salad

Ingredients (use vegan versions):

    3 to 4 ears fresh corn (organic is important to avoid genetic engineering)
    1 tomato, chopped
    1 avocado, chopped
    1/2 green bell pepper, chopped
    1/2 red bell pepper, chopped
    1/2 cup fresh cilantro
    2 tablespoons lemon juice
    2 tablespoons olive oil
    1 pinch chili powder
    1 pinch cumin
    1 pinch sea salt

Directions:

 Shave the kernels off the corn cob with a sharp knife into a bowl and toss thoroughly with remaining ingredients. Refrigerate until serving.

Quick and Easy Raspberry Oat Bars

Ingredients (use vegan versions):

    Crumb Mixture:
    2 1/4 cups flour (I've only used white, have not tried other flours)
    1 cup sugar
    1 cup oats
    1 cup vegan butter, softened (not melted)
    1 egg replacer (I used 1 tablespoon ground flax mixed with 3 tablespoon water, heated and let sit until gooey)

    Filling:
    3/4 cup raspberry preserves (or whatever flavor suits your fancy)

Directions:

1) Heat oven to 350 degrees Fahrenheit. Combine crumb mixture ingredients in large bowl. Mix by hand with a pastry blender or beat with mixer on low speed until the mixture resembles coarse crumbs.
