1 package extra firm tofu
1 small red onion, sliced
1 large avocado
1 Roma tomati
juice of 1 lime
small handful cilantro

"Magic Shell" Mango
Ingredients (use vegan versions):
1 ripe mango, chilled
2 tablespoons coconut oil
1 1/2 teaspoon cocoa powder
Directions:
1) If coconut oil is solid, heat just until it becomes liquid (not hot).
2) Whisk oil and cocoa powder together and drizzle over chilled sliced mango. The chocolate/coconut mixture hardens like "magic shell" ice cream topping!

Carrot & Courgette Ribbon Salad
Ingredients (use vegan versions):
1 courgette, washed
1 carrot, washed
Salad dressing
Directions:
1) With a vegetable/potato peeler, peel carrot and courgette lenthways into strips/ribbons. Remember to turn the courgette after a couple of peels get a bit of green edge on some of the ribbons – makes it pretty! Mix the ribbons together.
2) Drizzle your favorite dressing over the ribbons – I love a basic oil dressing with lemon or lime juice, bit of cider vinegar and S&P.

Herby Butter Bean and Potato Mash
Ingredients (use vegan versions):
6 to 8 small to medium new potato
1 – 15 ounce can butter beans, rinsed
2 cloves garlic, roughly chopped
Salt and pepper
herbs (dried or fresh) – parsley and chives are good
Vegan margarine, to taste
Directions:
1) In a large pot, combine potatoes, garlic and butter beans and cover with water. Bring to a boil and cook for 15 mins or so, or until potatoes are tender. Drain and return to pot.

1 cup chunky peanut butter (Teddie's Super Chunky is best)
3/4 cups sugar
1/4 cup melted vegan margarine
1 teaspoon vanilla
1/2 teaspoon baking powder
1 to 2 tablespoon of vegetable oil
