Super Easy Coleslaw (Oil-Based, Not Mayonnaise)
Ingredients (use vegan versions):
1 package coleslaw
1 cup brocolli flowerettes, chopped
2 sticks of celery, chopped
1 carrot, chopped
1/3 cup apple cider vinegar
1/4 cup canola oil (or another type of oil, possibily)
1 tablespoon sugar

Homemade Chipotle Parma!
Ingredients (use vegan versions):
2 cups walnuts
1 cup nutritional yeast
1 tablespoon onion powder
4 to 5 teaspoons chipotle seasoning, to taste
2 teaspoons garlic powder
1/8 to 1/4 teaspoon cayenne pepper, to taste
Directions:
Combine all ingredients in a food processor and blend for 1 minute or until thoroughly ground. Sprinkle on any food you like. (I personally love this on popcorn or baked potatoes with some olive oil.)

Marinade:
1 tablespoon oil (sesame, non-virgin olive, or sunflower)
1 teaspoon toasted (dark) sesame oil
2 tablespoons agave nectar or maple syrup
2 tablespoons each: tamari and cooking sherry or wine
1 lb. extra firm (or firm) tofu

2 cups powdered (confectioners) sugar

Open Faced Avocado, Olive and Sprout Sandwich
Ingredients (use vegan versions):
1 slice whole wheat bread
1 avocado, peeled, pitted and mashed
1 tablespoon vegan mayonnaise
2 tablespoons chopped black olives
Alfalfa sprouts (about 1/2 a handful)
Directions:
1) Spread vegan mayonnaise on bread. Mash avocado into a paste and spread on top of mayonnaise. Pile alfalfa sprouts on top of avocado. Pile chopped black olives on top of sprouts. Mmmmm!

Key Lime "Yogurt"
Ingredients (use vegan versions):
12 ounces silken firm tofu
1/4 cup lime juice
Zest from 1 lime
2 tablespoons sugar
Directions:
1) In a blender, combine all ingredients and mix. After mixing, refrigerate or place in freezer to chill.
I like to put granola on top so that I can grab some and go.

Peanut Butter and Cucumber sandwich

2 slices bread
3 to 4 tablespoons peanut butter, as desired
